Uncle Eddie's BBQ was founded in Spring of 2018. After a prosperous 25 year career at Penndot, I felt the time was right to strike out on my own. I had been cooking whole hogs for 30 years, and had been on the bbq circuses and chili trail in competition last 5 years and also went to myron mixon bbq school in 2016 and some of my good friends which inspired me to start the food truck trailer. Cooking has always been a passion of mine I also do caters fundraiser etc.

We are a mobile Caribbean cafe (better known as a food truck)
Chef Carrie Small has enjoyed serving up delicious Caribbean food all over Central Florida for over 3 years.  You will find Carrie and her staff in the truck at many festivals in the Tampa Bay area, from the St. Pete Grand Prix to Coachman Park Concerts.  The truck can even be brought to you for parties, private functions, employee appreciation days, picnics and much more.
